Ham/Broccoli/Swiss Quiche

This quiche is...my, my, my...SO GOOD!! I found the recipe in a magazine several years ago and love it. My mom and I had a "girl's only" birthday party for her and I made this recipe. We each ate an entire quiche! YUMMY!!


1 1/2 c Ham, cubed                                                                           1c Milk
6 oz (1 1/2c) Swiss Cheese                                                                1/2 tsp Salt
1 c Frozen Broccoli, thawed and drained                                             1/2 tsp Dry Mustard
4 Eggs                                                                                              1/2 tsp Pepper
Frozen Pie Crust

Preheat oven to 375°. Layer ham, broccoli and swiss cheese in pie crusts. Combine eggs, milk, salt, dry mustard and pepper. Pour over ham/broccoli/cheese. Place on cookie sheet and bake for 35-45 minutes, or until browned on top and eggs are set.

At Work Chocolate Cake

Oh...My...Gosh!! But I love this cake! Mom used to make this every few months. The glaze just makes the cake. It's really an easy recipe and I hope you enjoy it as much as I do.



2 c Sugar                                         4 tbs Cocoa
2 c Plain Flour                                  2 Eggs, beaten
1 tsp Cinnamon                               1 tsp Vanilla
1 c Water                                        1/2 c Buttermilk
1/2 c Crisco                                     1 tsp Baking Soda - dissolve into buttermilk
1 stick Butter

Preheat oven to 350°. Sift sugar, plain flour and cinnamon. Boil water, crisco, butter and cocoa for 1 1/2 minutes. Cool. Add to flour mixture. Add eggs, vanilla, buttermilk. Pour into a well greased 9" x 13" sheet cake pan. Bake for 40-45 minutes. Cool for 10-20 minutes.

Glaze:
1 stick Oleo                                                                4 tbs Cocoa
1 tsp Vanilla                                                               1 box Powdered Sugar, sifted
6 tbs Milk                                                                   1 c Chopped Nuts
Boil together for 1 1/2 minutes the oleo, vanilla, milk and cocoa. Add powdered sugar. Add chopped nuts, if desired.

Using end of wooden handle, poke holes in the still warm sheet cake. Pour glaze over cake and allow to cool completely before serving.

Broccoli Cornbread

This is a recipe that I take to almost all covered dish events and it goes over amazingly. This recipe is wickedly simple and only requires one mixing bowl and one baking dish. I inherited the recipe from my mother, but am not sure where she obtained it. Regardless, it is yummy which is why I have selected it as my first recipe post!


1 box Jiffy Cornbread Mix                                     1 box Chopped Broccoli, thawed & drained
1/2 c Self-rising Cornmeal                                     1/2 c Milk
1 med Onion, diced                                                   1 c Cheese, grated
3 Eggs                                                                             1 tsp Salt
1 stick Oleo, melted

Preheat oven to 350°. Combine all ingredients, adding oleo last. Bake in a greased 9" x 13" pan for 40-50 minutes or until slightly browned and pulling away from the sides of the pan. Allow to cool, then cut into 3" squares.

Day One

This week I will begin posting some of my favorite recipes. Some will have extensive ingredients, some will have several steps to preparation. I promise that none will be too difficult.

I have always enjoyed cooking, but was not able to spend much time in the kitchen due to my work hours. My husband and oldest daughter had to fix dinner for the family. It wasn't until my divorce that I was able to  enjoy more time in the kitchen. I worked an early first shift and was able to watch more Food Network and learn about combining various foods and flavors.

Now, I cook every opportunity I get. I have recently moved closer to my parents and have enjoyed copying some if my mom's recipes. She is my inspiration for creating this blog. I want to pass down to my daughters the cooking secrets she shared with me.

Since it is so late tonight, I will begin posting recipes tomorrow. I hope you enjoy them!
