This is a recipe that I take to almost all covered dish events and it goes over amazingly. This recipe is wickedly simple and only requires one mixing bowl and one baking dish. I inherited the recipe from my mother, but am not sure where she obtained it. Regardless, it is yummy which is why I have selected it as my first recipe post!
1 box Jiffy Cornbread Mix 1 box Chopped Broccoli, thawed & drained
1/2 c Self-rising Cornmeal 1/2 c Milk
1 med Onion, diced 1 c Cheese, grated
3 Eggs 1 tsp Salt
1 stick Oleo, melted
Preheat oven to 350°. Combine all ingredients, adding oleo last. Bake in a greased 9" x 13" pan for 40-50 minutes or until slightly browned and pulling away from the sides of the pan. Allow to cool, then cut into 3" squares.
