Cheese Nibblers

These are great for a late night snack or to take for a finger-food event. Something like sausage-cheese balls without the sausage. Tasty!!


1 c Flour                                                                                  1/2 c Oleo
1 c Shreeded Cheese                                                              1/4 tsp Salt

Preheat oven 350. Combine ingredients in bowl, blending with a pastry blender. Knead in bowl to form dough. Shape into balls using 1 tsp of dough for each. place on ungreased cookie sheets. Bake for 12-15 minutes.

Been Awhile...

I apologize for not posting any recipes recently. I've been bedridden with a terrible case of bronchitis. This on top of having multi-level spinal fusion surgery just 6 weeks ago made for a very bad couple of weeks.

I'm better now and will begin posting recipes again beginning Monday, March 15. Lord willing, I wont have any further delays and will be able to post recipes every other day as originally planned.

I hope you are enjoying the recipes I have posted thus far. The best are yet to come!

Hashbrown Casserole

This is another favorite covered dish recipe. While it fits in great at brunches, it fits in just as nicely at supper covered dish events as well.


2 c Shredded Cheddar Cheese                                           1 c Sour Cream
1 can Cream of Chicken Soup                                            1/2 stick Oleo, melted
1/2 c Onion, chopped                                                        Salt & Pepper
32 oz bag Frozen Hashbrown, cubed or shredded                 2 c Crushed Cornflakes w/1 tb Oleo, melted

Preheat oven to 350°. Combine all ingredients, except cornflakes, in large bowl. Pour into lightly greased 9" x 13" dish. Top with cornflakes. Cover with aluminum foil and bake for 45 minutes. Remove foil and place back in oven for 15 minutes. Allow to cool 20 minutes.

Dump Cake

This has to be the easiest cake recipe. One dish...period! You actually make the cake in the baking dish. How easy is that?!!


1 c Crushed Pineapple                                                                1 c Pecans, chopped
1 can Pie Filling (cherry, blueberry, etc)                                      1 stick Oleo, cut into slices
1 box Cake Mix (white or yellow)             

Preheat oven to 350°. In 9" x 13" pan, barely greased, place crushed pineapple. Spread on pie filling. Cover with cake mix. Sprinkle on chopped pecans. Place sliced Oleo on top. Bake for 35 minutes. Allow to cool for 20 minutes. ENJOY!
